Today I am sharing with you a french kind of cake, madeleines, with two different alternatives : you get to choose between maple syrup madeleines or carrot cake madeleines !
I got the recipe from the cookbook Mini Madeleines ( Marabout Edition ).
For the base of this cake,
you’ll need :
- 150g flour
- 125g soft butter
- 150g sugar
- 2 eggs
- 2 tablespoons milk
- 1 teaspoon baking powder
Whip the eggs with the sugar until you get a white dough
Add slowly the flour and the baking powder.
Let it cool down 30 minutes in your fridge.
Preheat your oven at 220°C. Pour a teaspoon of dough in each little mold ( put butter in each one before ).
Bake for 3 to 4 minutes at 220°C. Then bake for 3 to 6 minutes at 180°C.
For the maple syrup madeleines :
Just add 2 tablespoons to the dough and mix ! Then, bake !
For the carrot cake madeleines :
Add 200g grated carrots, 1 teaspoon of vanilla extract and 1 teaspoon of cinamoon and mix ! Then, bake !
